1/4 cup of chocolate chips
1/4 cup of ground almonds
2 drops of almond essence
1 teaspoon of baking powder,
2 eggs
1 1/2 tablespoons of milk
12. I filled with Curds but they could also have a chocolate ganache on (half melted chocolate mixed with half fresh dairy cream(the thick type) and spread on the top of each cupcake and choc chips scattered on the top.1 teaspoon of baking powder,
2 eggs
1 1/2 tablespoons of milk
INSTRUCTIONS
1. Put the sugar and butter into a bowl and beat by hand with a wooden spoon or use a mixer until creamy
2. Add1 egg and beat in
3. Add the second egg and beat in
4. Sieve in the flour and the baking powder and mix gently
5. Add the ground almonds, chocolate chips, almond essence and mix gently
6. Divide the mixture into cupcake cases which have been placed into a baking tray. I use a large spoon. This makes about 12 cupcakes in large cases. I fill each case about half to 3/4 full.
7. Pre heat the oven to gas 4--350F--180C
8. Cook in the middle to top of the oven if you have gas. I would suggest the middle for electric.
9. Cook for 15 to 20 minutes. DO NOT OPEN THE OVEN for at least 15 minutes as the cakes will sink.
10. They need to be firm to touch
11. Remove from the oven and cool
